2 cups almond milk
2 cups frozen organic berries – i use OOB
2 Tbsp raw honey or sweetener of choice
2 Tbsp maca powder
Blend all in a high powered blender Vitamix Australia, you really need it to be a high powered blender to blitz all the berries to bits, this is really important if your introducing new healthy habits and making new choices starting with smoothies and juices as you need to enjoy them. Investing in the best machine for the job is a important financial decision and you don’t want to make the wrong choice, especially if your going to be operating a business! I will tell you before the Vitamix i was using a Thermomix and it still didn’t live up to the power of blending that the Vitamix does.
Today I bought a smoothie from a new local juice bar and I admit as much as I wanted to support them, the smoothie was not the best, it was full of “bits”, it was not enjoyable at all and I feel really disappointed because I wanted them to succeed, maybe they will still. Perhaps it’s was a one off!
I will keep harping on and on again about organic berries, they are full of the most incredible nutrients it you eat them, spray free ad organic then you are doing yourself the biggest and best favour! Full of antioxidants and anti-cancer properties, you need to take the organic berry revolution seriously and start your day with a seriously joyous healthful organic smoothie like above.

RAW CHOCOLATE BERRY MOUSSE
2 cup mixed frozen organic berries
2 tsp raw honey or sweetener of choice
2 Tbsp raw cacao powder
1/2 cup almond milk
Desiccated coconut to garnish and extra berries to top
Place avocado, berries, milk, cacao and honey in Vitamix/ Thermomix or blender and blend till smooth and creamy but still a bit frozen – that way it’s nice and chilled.
Place in bowl and sprinkle with coconut and top with extra berries.
Berries are one of the MOST sprayed fruits in the western world with pesticides and chemicals, so this is why I stress the importance of organic here, they are full of wonderful antioxidants. Antioxidants help counteract the affect of free radicals which can cause cancer and are caused by exposure to environmental and personal toxins through food, water, air, chemicals, pharmaceuticals, drugs etc, so make sure your getting enough antioxidants through fresh clean, organic, local fruit and vegetables and get them into your body on a daily basis as much as you can!
A lot of people are afraid of fat, even good plant based fats!
I used to be to, but not anymore, Avocado’s are full of good saturated fats, the kind that keep you satisfied longer. High in Vit C and E , fibre, folate and magnesium to name a few! This is one super fruit you need to have in your life every day! It protects heart heath, regulated blood sugar, has anti cancer properties……what more do I need to say! This is one incredible fruit!
AMAZING CHOCOLATE ZUCCHINI BREAD
2 cups grated zucchini
1.5 cups almond flour
1 cup organic palm sugar (from a reputable supplier)
1/4 cup coconut oil
1/2 cup cacao powder
1.5 tsp baking powder
1 tsp sea salt
1 tsp cinnamon
1 tsp vanilla
Place all ingredients in a Vitamix Australia or other high powdered blender; pour into a loaf tin lined with baking paper
Bake at 180 degrees for approx. 60mins
Wow, Ive been craving bread or bread-like food lately, I think its the woolly weather in the beautiful Southwest WA at the moment, the temperature is dropping and its rainy, maybe its comfort food, but I think your going to see a lot of bread-ish recipes in the coming weeks.
So the trick is how do you make a good loaf minus all the nasties that are in bread on the supermarket shelves. Ingredients like soy, canola oil and all kinds of other chemicals are used in majority of breads not to mention gluten and the effects on gut health from wheat which is probably gmo…arrhhh a whole other issue for another post. This is why I avoid store bought bread. So this leads time to this beautiful moist sweet chocolate and zucchini bread, my first loaf of many to come, made from real whole foods. It can be eaten for breakfast as a snack or after dinner. I hope you enjoy it as much as I did, it is wheat, gluten, dairy free and free from refined sugar.

CACAO is the highest plant food in magnesium in the world! Magnesium is a relaxant and can help curb chocolate cravings, helps with pain by relaxing muscles; it supports the heart, increases brain power, aids in peristalsis (bowel movements), helps build strong bones and increases alkalinity. It is also a great source of soluble fibre, iron, zinc, chromium, copper, manganese and Vitamin C. It also contains many essential amino acids.
Rhubarb and Mandarin
5 sticks of rhubarb
2 Tbs raw honey or more to taste
Zest and juice and pulp of 1 medium mandarin
½ cup water
1 cup almond flour
1/4 cup butter or coconut oil
Wash and chop rhubarb and add to pot with water, mandarin pulp, juice and zest along with raw honey and let simmer until stewed.
In a bowl mix together the almond flour with the butter or oil with your hands until it forms little clumps.
Spoon fruit mixture into individual oven proof dishes and top with crumble mixture and bake at 170 degrees for about 10-15 minutes until the crumble is golden, you could also serve with a nice dollop of coconut yoghurt! Yumm Breakfast or dessert!!!!
Ah amazing Rhubarb, this wonder vegetable is chockers full of the great bone building Vitamin K! With most people being deficient in vitamin K you will be glad to know that just one serve gives you 45% of your daily intake..woohoo! Vitamin K also plays a important role in blood clotting, can help reduce bruising and build strong healthy bones to prevent osteoporosis and other bone diseases. Vitamin K is a fat soluble vitamin so be sure to eat some fat along with your Rhubarb (just like in this recipe) so you can absorb it and get all the wonderful benefits. It is also high in antioxidants vitamin C and A and the mineral manganese another great bone health nutrient.
Rhubarb is also high in insoluble fibre which does not absorb or dissolve in water , passes though our digestive systems in tact and is has many intestinal health benefits.
I like to think I am a mindful person on a every day level, I took plastic free July so seriously and can happily say I have still not taken a single plastic bag from a shop since, not that I did much before but it just made me more mindful than ever and I am so happy that this is now a thing for me.
I also don’t create a lot of rubbish/food waste at home either, but I was especially inspired by #NoWasteNovember and when I was making my almond milk the other morning and then made myself a delicious juice I wanted to turn the pulp remaining into something healthy and delicious, so here it is my Juice Pulp and Almond Cake recipe.
Serves 8 slices
2 cups juice pulp – Mine was sweet potato, grapefruit, pineapple and carrot
1/2 cup almond milk pulp
3 organic free range eggs – I always use Cackleberries
2 tbs aluminum free bicarb soda
2 tbsp Apple cider vinegar – I use Braggs
3/4 cup organic maple syrup
1/2 cup coconut oil – melted
1/2 cup coconut sugar
1/2 cup almond milk
pinch of Himalayan salt
Put the oven on 180 degrees. Combine all ingredients in a food processor or Thermomix to get a nice even batter , grease a 22cm spring form tin with coconut oil and pour in your batter. Bake for approx 45 minutes checking halfway as the top tends to burn a little before the inside cooks, the cake should be quite moist and when it cools its especially delicious and keeps well. If you see the top burning then just place a piece of foil over it. Serve with big dollops of coconut yoghurt or organic cream, fresh berries and a drizzle of maple.
There are so many ways you can go waste free in November, be mindful when you are shopping, how many meals can you get out of your fresh foods, can you live without processed foods and avoid all that plastic packaging it usually comes in, can you take your old egg cartons and get them refilled? If you sit and think about it there are thousands of ways. I challenge you to try it for the rest of the month.
